Zucchini Sott'olio ( pickled zucchini made nonna's way )

Green zucchini pickled the traditional Calabrian way using white wine vinegar and olive oil together with garlic, dried  oregano and thinly sliced capsicum - just like Nonna's. This preserve has a freshness that will enhance any panino filling combination or eaten out of the jar with fresh crusty bread! It's sooooo delicious !

Will keep well refrigerated once open if content is submerged in olive oil.
