Homemade Seasoned Breadcrumbs
Seasoned breadcrumbs is an essential ingredient in many of Nonna's recipies. Nonna keeps a steady supply of homemade breadcrumbs in the freezer. When we have left over quality bread, she removes the crust, cuts it in medium size pieces, dries the bread in the oven then once cooled she crumbs it using her food processor. The commercial breadcrumbs are often too fine to provide the desired texture and lack flavour. Give it a go – trust me- it will become a staple.
5 cups thickish breadcrumbs
I.5 cups grated quality parmesan/Grana Padano cheese
½ cup finely chopped continental parsley
Salt , pepper
1 teaspoon finely chopped garlic
Combine all the ingredients in a large bowl. Taste for flavour. I love parmesan so I always add a bit more.
